    The Bison I bought was a little on the tough side, but saying that I don’t think it was as tough as some venison that I have had. The taste was very savory. I believe the toughness was because it was not prepared correctly.

    The bison brisket has been amazing every time. I’ve only done this is a covered roasting pan at low temperatures for a few hours. The recipe on this site has been a hit with friends and family.

    Extremely tough piece of meat. I prepared it on my smoker, low and slow. Temp was rare. Brisket was very tough, even in the middle and I ended up throwing out all but five or six slices. Not happy.
