Cut from the Chuck Primal located on the upper shoulder of the Elk. The Chuck Eye Steak delivers the flavorful experience of a chuck roast while delivering some tenderness of the Elk Ribeye. This is why this steak is often called a “Poor Man’s Ribeye Steak.”
Cooking method
Cooking this value steak does require a bit more care. We recommend using the “low-and-slow” method by keeping the heat source temperature low, then slowly cooking longer than you would with a traditional cut elk ribeye.
