Flavor Profile

This is chicken with real flavor. Juicy and tender all the way through with the kind of flavor that only comes from a diet rich in fresh grasses, bugs, and sunshine. The skin crisps nicely to a golden brown.

Cooking Notes

Great tasting chicken is all about patience: a dry bird, a hot oven, and enough time to rest.

Prep: Thaw your chicken in the fridge beforehand: 1-2 days for a full bird or overnight for chicken breasts. Pat dry and bring to room temp approximately 30 minutes before cooking

Whole Chicken: Roast at 425°F for about 20 minutes per pound; roughly 75-90 minutes. Cook to 165°F at the thickest part of the thigh. Let it rest for 10-15 minutes before carving so the juices settle.

Chicken Breasts: Roast at 425°F for 20-25 minutes, until golden. Cook to 165°F at the thickest part. Let rest for 5 minutes before slicing so the juices stay put.

Pro tip: Always use a meat thermometer for a precise cook every time.
