Cilantro Jalapeno Chimichurri Bison Burgers

Ingredients

    • 3 ground bison patties
    • 3 brioche burger buns
    • 3 tbsp avocado oil
    • 1 beefsteak tomato (sliced)
    • 3 slices white cheddar cheese
    • Arugula

    • 1 cup fresh cilantro
    • 1 cup fresh parsley
    • 1/4 - 1/2 of a jalapeño (sliced, to taste)
    • 5 cloves fresh garlic
    • 1 tsp crushed red pepper flakes
    • 1 tsp dried oregano
    • 1/2 tsp sea salt
    • juice of one lime

    Directions

    1. Make the sauce. In a large food processor, add all of the chimichurri ingredients. Pulse a few times and then blend on high for at least 1 minute until everything is well combined.
    2. Preheat skillet. In a large griddle or cast iron skillet over medium-high heat, add the avocado oil.
    3. Season and sear. Once hot, add the burger patties. Cook for 5-8 minutes on each side until your desired doneness.

      Medium Rare is about 5 minutes on each side until the internal temperature is 130-135.
      Medium is about 6 minutes on each side until the internal temperature is 140.
      Well Done is 7-8 minutes on each side until the internal temperature is 160.

    4. Melt cheese. In the last minute or two of cooking the burger patties, add the sliced cheese and let melt.
    5. Build burgers. Assemble your burgers. On the bottom bun, place a bed of arugula, the bison burger patty covered in melted cheese, then thinly sliced tomatoes, and a place heaping spoonful of the chimichurri sauce on top.
