Garlic Lemon Oven-Baked Lamb Chops

Ingredients

  • 4 Honest Bison Lamb Chops
  • 6 tbsp olive oil – divided
  • 4 tbsp lemon juice – divided
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp rosemary
  • 3 tsp minced garlic
  • 1 ½ tsp salt – divided
  • ½ cup plain Greek yogurt (or non-dairy substitute. see notes)
  • ½ cup fresh mint leaves
  • 2 oz feta cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. Place the lamb chops into a plastic marinating bag.
  3. In a bowl, combine 4 tbsp olive oil, 3 tbsp lemon juice, oregano, thyme, rosemary, 1 tsp. salt, and pepper. Pour into the bag with the lamb chops and massage the marinade into the lamb chops, fully covering them all.
  4. Let marinate for 1 hour.
  5. While the lamb chops are marinating, make the mint sauce. Add the Greek yogurt, mint leaves, feta cheese, 1 tbsp lemon juice, ½ tsp Salt, and 1 tbsp olive oil to a food processor and pulse until smooth.
  6. After 1 hour, heat 1 tbsp olive oil in a skillet over medium-high heat. Remove the lamb chops from the bag and sear in the heated skillet for one minute per side. Place the seared lamb chops into an oven-safe baking dish and bake for 5-7 minutes, or until the internal temperature reaches 130 degrees F. for medium-rare, or 140 degrees F. for medium.
  7. Remove from oven, transfer to plate and let rest for five minutes.
  8. Serve with your choice of side and mint sauce.
