Our grass-fed lab is mild, tender and delicately sweet — an easy swap that makes everyday recipes taste special. It brings a balanced flavor and texture that stays juicy and tender throughout the cooking process. 

Cooking Notes

Grass-fed lamb is lean, so it cooks fast and needs a little added fat during the process. 

Prep: Thaw in the fridge overnight and bring to room temp approximately 15 minutes before cooking.

Cook: Brown in a hot skillet over medium-high heat, breaking it up as it cooks; about 6-8 minutes. For burgers, grill 3-4 minutes per side. 

Temp: Cook to 160°F for ground lamb,

Rest: For patties, rest 3-5 minutes before serving 

Pro tip: A splash of oil in the pan keeps ground lamb juicy and don't expect a lot of fat to drain. Always use a meat thermometer for a precise cook every time.

Can I substitute ground lamb for ground beef?

Yes — use it 1:1 in almost any recipe that calls for ground beef. Lamb brings a richer, slightly sweeter flavor, so it shines in burgers, meatballs, tacos, chili, and pasta sauces. It's leaner than most ground beef, so add a little oil to the pan.

What does ground lamb taste like?

Mild, tender, and delicately sweet — richer than ground beef but not overpowering. Because ours is 100% grass-fed, the flavor stays clean and balanced, without the strong taste some associate with conventional lamb.

Is your lamb American / US-raised?

Yes. Unlike most lamb in US stores, which is imported from Australia or New Zealand, ours is raised entirely in the USA by Umpqua Valley Lamb in the hills and valleys of Western Oregon.

What temperature should ground lamb be cooked to?

Cook ground lamb to an internal temperature of 160°F. Unlike a whole cut or chop, ground meat shouldn't be served pink. Use a meat thermometer for accuracy.

Is ground lamb healthy?

It's a nutrient-dense source of protein, bioavailable iron, zinc, and B12. Because it's 100% grass-fed, it also carries a better omega-3 profile than grain-fed lamb.
