With a flavor profile similar to that of bison plus just a hint of sweetness, our Ground Elk is an excellent choice for all your favorite ground meat recipes. It’s lean as well as high in protein and iron. Each pound of ground blend is made up of 12 oz of ground elk plus 2 oz of elk heart and 2 oz of elk liver (12-2-2 ratio) or our 6-6-4 ratio of 06 oz of ground elk, plus 6 oz of elk heart and 4 oz of elk liver. Approximately 5% fat content.
