December 14, 2016We aren’t just limited to Bison steak and potatoes! Today, we made Soboro Bowls, a traditional Japanese dish using our ground bison. Soboro is frequently eaten in bentos during lunch time! Although it’s not Paleo, it has very little sugar and soy in the entire batch. If you have ideas on making it Paleo, try making it with your own sugar and soy substitutions. (Perhaps with coconut aminos or honey)

Ingredients:
1 lb ground bison
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons sugar
2 tablespoons sake
minced ginger to your liking
Preparation:
1. Bring water to a boil
2. Put in ground bison in the boiling water and cook through
3. Drain bison
4. In a saucepan, put in all liquid ingredients on medium heat until everything incorporates, and bring to a boil
5. Add in ground bison and stir until liquid is absorbed
Usually, it’s eaten with sweet eggs and steamed peas on a bed of steamed white rice, but we used okra tonight!
