    Used for my German Shepherd mix dog. He’s allergic to beef and chicken. Of course he loves it!!

    My wife makes bison stroganoff with a chuck roast in a crock pot and it is the best stroganoff ever!!!!!!! she puts it on with all the seasonings and wine the night before and lets it go on low all night the next afternoon we shred the chuck add the sour cream and butter milk cook and toss in the noodles and its heaven on a plate.

    After reading about how lean bison meat is, I did a lot of reading before I decided how to prepare this piece of meat. I decided I was going to smoke it. I seasoned it 24 hours in advance with salt pepper garlic and onion powder. I pulled it out of the refrigerator a couple of hours before I put it on the grill. I smoked it for 2 hours at 225. Took it out and covered it and butcher paper and smoked it for another 3 hours. I uncovered it and then smoked it for another half an hour. And then let it sit for half an hour. It didn’t shred as easily as I thought however it was tender and moist and full of flavor.. we ate leftovers for a couple of days. We added it to salads, tacos and rice. I was very sad bite was gone. I will definitely order this product again.

    I used this roast in a Texas chili and it was fantastic – even better the second day. The quality of the meat was impressive, perhaps one of the cleanest and healthiest looking cuts I’ve ever worked with. The texture was buttery and tender, not chewy at all, which surprised me given how lean the cut was. Great flavor to boot. Will definitely be purchasing this cut again.

    My favorite do nothing HB cut for food prep. Toss it in the crock pot with some seasoning and food prep is complete when I get home from work. I get multiple tasty meals out of these bad boys.
