Elk, especially elk that is naturally grazed, is always in high demand by our customers. And, like all natural things, the process can’t be rushed. Since we must patiently wait for the right time to harvest our animals, this means we often run out of Elk long before the next North American season begins. However, the New Zealand elk season is opposite to ours, affording us the opportunity to source more naturally grazed elk all year long — without compromising our standards and quality. Since the flavor is also slightly different, this also offers our customers the opportunity to try something new!
