The meat was extremely tender and moist. The flavor was excellent, although admittedly a bit gamier than supermarket cuts of bison we’ve had. But my husband soaked the second two filets overnight in milk, and that fixed it. Extremely pleased with our purchase, and can’t wait to order again.

I bought this with the Elk Medallions as a test. The Bison Filet wins!
I smoked each at the same time for 1hr. until 115ĀŗF, then seared on a hot grill. It doesn’t really sear like I am used to, as it is very lean!
I am looking forward to conducting the same test with an Elk Tomahawk vs. Bison Tomahawk!
