    Brisket was very good, however I recommend cooking it in a slow-cooker as opposed to smoking it.

    The Bison I bought was a little on the tough side, but saying that I don’t think it was as tough as some venison that I have had. The taste was very savory. I believe the toughness was because it was not prepared correctly.
