Nothing beats a lazy Sunday morning brunch in our books. There’s just something so luxurious and decadent about it. And this Sunday Brunching Sausage Skillet recipe will help you take your next weekend to the next level. We made this version with our pastured pork breakfast links but you can make it with any sausage you like. We also have Chorizo, Sweet Italian and Spicy Italian, so take your pick. Plus, this recipe from our friends Primal Pioneer is super easy to make. You won’t even have to get out of your PJs. Make it even more epic by adding freshly squeezed OG and flakey croissants. You won’t regret it

Ingredients
- 1 pound Pork Breakfast Sausage Links
- 1 Tbsp. olive oil
- 1 large sweet potato – diced
- 1 cup fresh baby spinach
- 1 Tbsp. pure maple syrup
- 4 eggs
Directions
- In a skillet over medium heat, sear the Italian sausage links for about 2 minutes on each side, then add in ¾ cup water and reduce heat to medium-low and let simmer until the internal temperature reaches 165 degrees F. (about 7-10 minutes) Remove from skillet and set aside to cool.
- In a separate skillet, heat the olive oil over medium heat and add the diced sweet potato. Cook until soft and crispy on the outside, about 10-15 minutes.
- Add the spinach and maple syrup to the skillet with the cooked sweet potatoes and sauté until the spinach has wilted.
- Slice the cooked sausage and add to the skillet. Let cook for another 2-3 minutes.
- Make four “wells” in the skillet for the eggs. Add the eggs to the skillet and cook until the whites are fully cooked, about 5-7 minutes (to speed up this process, you can cover the skillet with a lid).
- Remove from heat and serve immediately.
