Everyday Elk Liver Pâté

October 9, 2020Breakfast is one of our favorite meals – for two really great reasons. One, it’s delicious and two, you really can eat it for any meal. This hearty, healthy eat-any-time-you-want Bison Breakfast Burrito Bowl by The Kitcheneer uses our flavorful Bison Sausage to bring this dish to life and add some extra protein. However, as delicious as it was, we are currently sold out of ground bison sausage and are not sure when it will be back. (Sad face) Don’t let that stop you from enjoying this incredible recipe though. You can easily swap in your favorite breakfast meat – like seasoned Ground Bison, our amazing Uncured Bison Bacon, or even some leftover steak! Let the crunching begin!

Recipe: Bison Breakfast Burrito Bowls
Ingredients:
2, diced Large Sweet Potatoes
1 lb Ground Bison Sausage (or breakfast meat of your choice)
2 cloves, minced Garlic
1, diced Red Onion
1, diced Green Bell Pepper
4 Fried Eggs
1, diced Roma Tomatoes
1, pitted and sliced thin Avocado
1/4 cup, chopped Cilantro
Instructions:
Make the base:
1.) Preheat oven to 405.
2.) On a parchment-lined baking sheet toss sweet potato, onion, and green bell pepper with 1 tbs olive oil and some salt and pepper.
3) Bake in the oven for 20 minutes or until cooked.
Prep the filling:
4. In a medium-sized skillet, heat on medium-high.
5. Add sausage and garlic and break apart sausage into crumbles with a wooden spoon.
6. Saute the sausage while stirring occasionally until fully cooked (about 7-8 minutes).
7. Remove from heat and make fried eggs.
Bring it all together:
8. Fill bowls with sweet potato mixture, top with sausage, tomato, cilantro, avocado, and an egg!
