December 11, 2015As the weather starts to cool down our thoughts (and tummies) start to turn to foods that both comfort and warm us. Roasts. Stews. Chile. The thicker and heartier the better. Here’s one of our favorite recipes for homemade bison marinara sauce. It’s simple but delicious. And a real crowd-pleaser. Make a huge pot of it and serve it over pasta, spaghetti squash or zoodles (zucchini noodles)!
Bison Marinara
Ingredients:
1/2 onion diced
1 carrot diced
1 garlic clove minced
3 T olive oil
1/3 cup red wine
1T oregano
1T thyme
1 pack of ground bison
1 can (28 oz) of marinara sauce
Preparation:
Heat skillet, pour olive oil, sauté onions, add garlic once onions are sweating, add carrots and wine.
Cook for 5 min until wine has reduced.
Add ground bison, salt,pepper, oregano, & thyme and cook until meat is browned.
Pour into a slow cooker, add can of tomatoes and cook on high for 2.5-3 hrs.
Taste and add salt as needed.
Serve with pasta, spaghetti squash or zucchini noodles (AKA: Zoodles!)
