WILDLY DELICIOUS ELK

Our naturally-grazed elk is a true treat with a rich, subtly sweet flavor and tender texture.

Farm raised in Minnesota

Farm-raised in the fields of Minnesota, our Elk are free to forage as they would naturally, eating a combination of native grasses, shrubs, leaves, wild grains, bark and berries. This results in elk meat that is tender and lean with a rich, slightly sweet flavor.

Great flavor, no gamey or otherwise off taste that would have put my family off. They all loved the meat which included these elk medallions as well as other venison, bison, etc.

Food was delicious but need to do something about the shipping costs

Well, this was fun. I bought the Elk Medallions as well as the Bison Filet Mignon for a taste test / comparison. I smoked all together for an hour until internal temp was 115ºF. I then quick seared on a hot grill. (All this meat is so lean, it doesn’t really sear!)

I definitely needed to cut across the grain to keep it “tender”. But, the winner was clearly the Bison Filet.

Btw- what I was really shopping for was the Elk Tomahawk. And that is marbled, which I think will be better to my pallet.
    😉

Overcooked these so they were a little tough, still getting used to cooking elk meat!

  9. Dana Morgan

The only reason it gets 4 stars is because Elk is so lean. But great quality.
